Quick and Easy Gluten-Free Appetizer Roll Ups

We have all been there; either we decide to throw together a last minute party or we are invited to someones elses house and we don’t have a lot of time to fuss to make something. For those who are gluten-free it is not as easy as stopping at the nearest store to pick something up, sometimes gluten-free selections are not always available.  No Worries.  If you have some tooth picks, garnishes and rollable meats, cheeses and grilled veggies you can put something out in short order.

Gluten-free meats and cold cuts roll beautifully, garnished with fresh herbs, cherry tomatoes, mini sweet pickles, olives or marinated mushrooms. If you want to stay more on a vegetarian focus try grilling eggplant, zucchini or peppers and roll with cheese, or pesto.  Or if you are really pressed and don’t even have enough time to roll, consider layering things like fresh mozzarella with sliced tomato, garnished with fresh basil and drizzled with olive oil and balsamic vinegar.  Sometimes I lay out just grilled or roasted veggies and serve with hummus or a gluten-free dip.  The trick is to stay creative making entertaining, easy, enjoyable, and fun.
