Cinnamon and Sugar Cookies

Makes 2 Dozen Jumbo Cookies
Lightly spiced with a kick of cinnamon.  From The Gluten-Free Hassle-Free Cookbook, by Marlisa Brown.

1/3 cup unsalted butter
2 Tbsp ground flaxseed
½ cup granulated sugar
½ cup packed light brown sugar
1 egg
1 tsp pure vanilla extract
1¼ cups white rice flour
¾ cup tapioca flour
½ tsp xanthan gum
½ tsp baking soda
½ tsp gluten-free baking powder
½ tsp ground cinnamon
¼ tsp ground cloves
¼ tsp ground nutmeg
¼ tsp ground ginger
2 Tbsp coconut milk
1 cup Hershey’s cinnamon chips
½ cup granulated sugar
1 tsp ground cinnamon

1. Heat oven to 350 degrees F. Line cookie sheets with parchment paper.
2. Beat butter, flaxseed, sugars, egg and vanilla in a large bowl until light and creamy.
3. Sift together dry ingredients, flour through ginger. Add ½ to butter mixture and beat well. Add coconut milk and remaining dry ingredients, beating until well blended. Stir in cinnamon chips.
4. Mix remaining ½ cup sugar and 1 tsp cinnamon. Place into small dish. Form cookies into 2-inch balls. Roll in cinnamon sugar and place on prepared cookie sheet. Bake for 8 to 10 minutes. Remove from cookie sheet and place on wire rack to cool completely.

Tip: Make your own cinnamon chips by combining 2/3 cup sugar, 2 Tb soft butter, 3 Tb cinnamon, 3 Tb corn syrup and ¼ tsp vanilla. Spread on cookie sheet and bake in 300 degree oven for about 15 to 20 minutes until bubbly. Cool completely then chop into small pieces.

**Allergy Tip: GF, FF, SFF, NF, PF, V. To make milk free use margarine in place of the butter, to make egg free use any eggless egg substitute in place of the egg, to make soy-free make your own cinnamon chips as noted in the tip, to make vegan make your own cinnamon chips per the tip , use margarine in place of the butter, use an eggless egg in place of the egg.

FODMAPs: To make FODMAP friendly substitute granulated sugar for the light brown sugar and make your own cinnamon chips as noted in the tip.
